Clover Sonoma, a Northern California dairy, worked with Mattson to create a pipeline of new products to support a national expansion strategy. After a co-creation journey that included concept ideation, naming, consumer testing, innovation roadmapping, product development using Mattson’s Microthermics equipment, regulatory guidance, commercialization and sales samples production, Clover launched Moon Milks, a line of organic milk beverages with fruits, botanicals, and spices for relaxation and wellness. The product launched nationally in Whole Foods in the spring of 2022.
