A New Tradition Powered by Mattson AI

This month, Chief AI Officer Steve Gundrum and Chief New Product Strategy Officer Barb Stuckey stepped into the virtual test kitchen to lead a unique culinary experiment. They challenged Chef Morgan, the Executive Chef of Chef Insights™ AI, to assemble a group of chefs with diverse backgrounds and develop creative ways to use Thanksgiving leftovers.

The result was a rapid, structured, multi-chef ideation session that demonstrates how Mattson blends real human intelligence with AI-driven culinary creativity.

Meet the AI Chef Insights Council

Under Chef Morgan’s direction, the system assembled a cross-cultural team of AI chefs:

Each chef created a signature turkey soup, added their suggestions to the other chefs’ soups, and their ideas evolved. Steve and Barb gave them the challenge of using real Thanksgiving leftovers such as stuffing, cranberry sauce, mashed potatoes, roasted vegetables, and turkey skin. With this, the chefs went back to the kitchen.

This workflow mirrors the best of Mattson’s collaborative culinary process, accelerated by Chef Insights AI.

How Mattson Insights AI Works

  1. Steve and Barb Set the Brief: Their prompt directed the AI to assemble chefs, propose and create an elevated turkey soup recipe — using the turkey meat or carcass — that represents their cooking style.
  2. Chef Council Assembles Automatically: Chef Morgan identifies chefs with the right backgrounds, each trained with distinct culinary logic and experience.
  3. Round by Round Culinary Ideation:
    • Round 1: Chefs present their own cuisine based-turkey soups
    • Round 2: Chefs add to and riff on the others’ styles
    • Round 3: Steve and Barb issue a challenge — “Add a signature ingredient to your soups by using classic Thanksgiving leftovers”
  4. Final Synthesis: Guided by Steve and Barb’s challenge, the council debated and selected the most compelling, high appeal concept.

After extensive discussion, one concept stood out.

Why this soup was selected:

  • Bold yet familiar
  • Adaptable to household leftovers
  • Stuffing masa dumplings create standout texture
  • Cranberry adds subtle acidity
  • Visually appealing and highly shareable

Flavor Snapshot:

Charred tomatillo turkey broth, shredded turkey, hominy, roasted corn, stuffing-masa dumplings, a small amount of cranberry for acidity, crispy turkey skin, and fresh garnish of shredded radish and cabbage, plus cilantro and avocado.

Chef Diego described it simply:
“This one walks in and says, ‘I am the new tradition.'”
