Mattson transformed an MBA student entrepreneur’s passion for ocean health into a sustainable seaweed snack business. Mattson took his kitchen recipe for a crunchy seaweed puff and developed a proof-of-concept prototype with industrial-grade ingredients and processes in our lab. We created 3 craveable, savory flavors and conducted a preliminary co-packer search to leverage once the volumes reached the appropriate level. Our client refined the process and product. Initially launched at farmers’ markets in 2019, the product has since expanded to independent retailers and is now available in the Natural channel, including Whole Foods.
