Food Scientist Jarrett and Serial Entrepreneur Andy partnered together to create the world’s first coffee without the beans. They came to Mattson with a garage-made prototype and a vision for what molecular coffee can be. Their goal was to deliver the same physiological and sensorial experience as a traditionally harvested coffee but without the toll on the environment. We explored a wide range of sustainable and upcycled plant-based ingredients while diving deep into the science of coffee. Through collaborative worksessions and many bench iterations, we developed a base that would serve as the foundation for a range of “coffee” products – from grounds to RTD cold brews to mocha lattes.
