Cholula’s new brand leadership wanted to reformulate their hot sauce formulas with cleaner ingredients true to their original authentic recipes. Mattson rapidly assessed and reformulated the green pepper and chipotle hot sauces in time for sampling at Expo West. The improved formulas not only had cleaner ingredients but also tasted better. Despite the COVID-19 lockdown, Mattson completed product development and coordinated remote plant trials with the Cholula plant in Mexico. The reformulated sauces hit the market in 2020, positioning Cholula well for its later acquisition by McCormick.
