Mattson identified an opportunity for Dole Fresh Vegetables to enter the value-added fresh cut vegetable meal kits market, capitalizing on the popularity of sheet pan meals and meal kits. We developed the concept, tested it with consumers, and formulated the product line. Dole launched three varieties of Sheet Pan Meal Starter Kits in December 2021, and due to their success, they are expanding distribution to more markets.
