Mondelez aimed to create soft cookies in the Breakfast Biscuit category for their Enjoy Life brand, known for being allergen-free. Mattson worked on product design, flavor strategy, development, and scale-up, creating cookies without allergens like gluten, eggs, dairy, nuts, and soy. The result was the successful launch of Enjoy Life Breakfast Ovals in four delicious flavors in September 2018: Maple Fig, Cinnamon Apple, Berry Medley, and Chocolate Chip Apple.
