Our collaboration with the EVERY Egg Company involved enhancing their sustainable egg protein made through fermentation, optimizing its functionality for various applications. We improved the liquid egg formula, developed additional products showcasing the potential of egg white proteins, and established customer panels for deeper insights. These efforts led to identifying a prospective customer for the innovative protein, presenting them with developed samples to illustrate the opportunity. This project exemplified the synergy between insight-driven strategies and product development in creating a sustainable, safe, and versatile egg alternative.
