JOI, a plant-based milk company, initially pursued a complex appliance system for their product. However, Mattson recommended a more sustainable approach—a concentrated almond milk “base.” The collaboration resulted in an innovative nut butter that can be blended with water to make plant-based milk in any quantity needed, reducing waste. JOI later returned to develop a powdered version of their milk, which launched successfully in 2021, offering a convenient and eco-friendly option in a compostable pouch.
